SONORA
The only state with bacanora production (DO)
Bacanora has a Designation of Origin (DO), and is a fermented beverage distilled from tatemado agave. It is used in rituals and celebrations by the Opata indigenous communities living in the sierra of Sonora.

Currently producing:
- Mead is a liquor with roots in Mayan culture.
- Balché, a sacred wine produced from the bark of the Balché tree.
- Xtabentún, a liqueur of Mayan origin produced from honey from bees fed with the flower of that name (not currently being produced).

CHIAPAS
Currently producing:
- Pox or Posh corn liquor of Mayan origin.

- Mezcal with Designation of Origin (DO) in the municipalities of San Luis de la Paz and San Felipe.

GUERRERO
3rd Mezcal Producer
- Artisanal mezcal in the central, northern, low mountain, tierra caliente and coastal areas of the state.
- Abocados: mezcal flavored with an insect, fruit or herb inside the bottle, such as coconut, mango and damiana.
MICHOACÁN
Currently producing:
- Mezcal promoted mainly through the Society of Mezcal Masters and Producers.

MORELOS
Currently producing:
- Agave distillate (mezcal), produced in 30 municipalities in the state, 3 of which are indigenous, mainly for export in bulk to Europe.

Agave on more than 30 thousand hectares, which is processed in the neighboring state of Jalisco.
NUEVO LEÓN
Currently producing:
- Mezcal
The state is currently planting:
- Grapevines in 13 municipalities in the state, although without local processing.

- Xtabentún, a liqueur made with fermented honey from bees that feed on xtabentún flower and aniseed.

- Jobito wine, made from wild yellow plum (jobo) crushed with aguardiente, sugar and piloncillo.

- Cocoa liquor made from Cacao Grijalba, the state's Designation of Origin (DO), which is produced in three productive sub-regions: Chontalpa, Sierra and Centro.

Metzal is the pulp or vegetable tissue that results from the process of scraping the cajete of the maguey for the mead to emanate. The tradition is more than 400 years old in the regions of Hidalgo and Tlaxcala.

VERACRUZ
Currently producing:
- Morita xiqueña, a typical drink from the municipality of Xico, based on blackberries and with a low percentage of alcohol.
